CHILI RECIPE: HIGH-PROTEIN + MACRO-FRIENDLY

This hearty, comforting take on a bean-less chili is the perfect meal when the weather starts to get chilly (no pun intended). With minimal ingredients and just 10 minutes to prep, this makes a great weeknight meal (and makes plenty for leftovers, too).

 
 

PREP TIME: 10 minutes  |  COOK TIME: 60 minutes  |  MAKES: 6 servings


WHAT YOU NEED:

  • 1 Tbsp. oil

  • 1 large yellow onion, diced

  • 2 lbs. ground meat (beef, turkey, chicken)

  • 4 Tbsp. tomato paste

  • 3 Tbsp. chili powder

  • 1 Tbsp. garlic powder (or 6-8 cloves of minced garlic if you’ve got it)

  • 1 Tbsp. cumin

  • 2 c. broth (beef or chicken)

  • 28 oz. fire-roasted tomatoes, undrained

  • 1/2 tsp. salt

  • 1/2 tsp. pepper

WHAT TO DO:

  1. In a Dutch oven or large pot, heat oil over medium heat.  Add onions and sauté until they start to turn translucent (about 3-5 minutes).

  2. Add ground meat and cook until browned (about 5-7 minutes).

  3. Reduce head to medium and add tomato paste, chili powder, garlic powder, and cumin, stirring until meat is coated.

  4. Add the broth and fire-roasted tomatoes and mix well.

  5. Bring chili to a boil. Once boiling, reduce heat to a simmer.

  6. Season with salt and pepper, adding more to taste as the soup is cooking.  As it cooks, the liquid will cook down and spices will become more concentrated.

  7. Simmer, uncovered, for 45-60 minutes, stirring every 10-15 minutes to prevent burning.

NOTES:

  • Bone broth can be significantly more expensive than stock or broth varieties; it also carries an additional 8-10g of protein per cup. The flavor is the same; use what makes the most sense for your values, goals, and wallet!

  • Amount of salt you want/need may depend on the sodium content of your broth choice.

  • Like more of a kick? Add some chipotle powder or cayenne pepper 🔥

  • Pairs well with a sprinkle of cheddar cheese, dollop of sour cream, sliced avocado, chunk of cornbread…the options are endless!
